Eggplant Roll of Roll ‘N Bite: A Feasibility Study

Abstract
Many consumers are increasingly seeking healthier snack alternatives that do not sacrifice the familiar taste of traditional Filipino comfort foods. "Eggplant Roll" by Roll ‘n Bite is an innovative variation of the classic Filipino spring roll (lumpia), utilizing thin slices of eggplant as a nutrient-dense "wrapper" instead of traditional flour-based wrappers. This study evaluated the feasibility of the business across five key dimensions: technical, market, organizational and management, socio-economic, and financial. Results indicate an exceptional financial performance, with an Internal Rate of Return (IRR) of 276.01% and a Net Present Value (NPV) of ₱1,008,728.38. The project is projected to recover its initial investment in just 0.41 years (Discounted Payback Period). Based on these robust indicators, the implementation of Roll ‘n Bite is highly recommended as a viable, sustainable, and profitable food venture.
